Ingredients

  • 6 halves Pear halves
  • 1/2 cup Cottage cheese
  • 1 tablespoon Chopped pimento
  • 1 tablespoon Chopped green pepper
  • 6 halves Walnut halves
  • 1/8 teaspoon Paprika
  • 6 tablespoons Salad dressing
  • 6 pieces Lettuce leaves
  • 4 Egg yolks
  • 1 teaspoon Mustard
  • 1/2 cup Vinegar
  • 4 tablespoons Sugar
  • 1/2 cup Water
  • 1/4 teaspoon Paprika
  • 1 teaspoon Salt
  • 2 tablespoons Flour

Instructions

  1. 1In a bowl, whisk together the egg yolks and vinegar. In a separate bowl, thoroughly mix the salt, mustard, sugar, paprika, and flour. Slowly add the water to the dry ingredients, taking care to avoid lumps. Pour the mixture into the egg yolk and vinegar mixture. Cook slowly, stirring constantly, until the dressing thickens and becomes creamy. Thin with sour cream or whipped cream, if desired.
  2. 2Arrange the pear halves on the lettuce leaves. In a small bowl, thoroughly mix the cottage cheese, pimento, green pepper, and paprika. Fill each pear half with the mixture. Place salad dressing over the mixture and lay one walnut half on top of each portion. Serve cold.
