Ingredients

  • 4 tablespoons Strong brewed coffee
  • 1 teaspoon Vanilla extract
  • 1 1/2 cups Powdered sugar

  1. 1In a small bowl, combine the strong boiling coffee and vanilla extract. Stir to combine.
  2. 2Gradually add the powdered sugar to the coffee mixture, whisking constantly until the icing reaches a spreadable consistency. If the icing is too thick, add a few drops of coffee. If it's too thin, add more powdered sugar.
  3. 3Spread the icing over one layer of cake and place the upper layer on the lower. Place the icing on the top layer and on the sides. Let it set before serving.
