Creamed Onions (Four portions)

This classic creamed onions recipe offers a comforting and flavorful side dish, perfect for a simple yet elegant meal. Ingredients

  • 6 onions Onions
  • 2 tablespoons Butter (Originally butter.)
  • 2 tablespoons All-purpose flour
  • 1 cup Milk
  • 1/4 teaspoon Salt
  • 1 each Egg yolk

Instructions

  1. 1Peel the onions under cold water. Place the onions in a stew-pan and cover with boiling water. Boil for 5 minutes, then drain.
  2. 2Cover the drained onions again with boiling water and cook for 10 minutes. Drain, recover with boiling water, and cook for another 10 minutes, or until tender.
  3. 3In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute, stirring constantly. Gradually whisk in the milk until smooth. Season with salt. Cook, stirring constantly, until the sauce thickens, about 3-5 minutes. Remove from heat.
  4. 4Gently stir the cooked onions into the hot white sauce. In a small bowl, whisk the egg yolk. While the sauce is still steaming hot, add the egg yolk and stir to combine. Serve immediately.
