Creamed Onions (Four portions)
This classic creamed onions recipe offers a comforting and flavorful side dish, perfect for a simple yet elegant meal. The tender onions are simmered to perfection and then enveloped in a rich, creamy white sauce. Ingredients
- 6 onions Onions
- 2 tablespoons Butter (Originally butter.)
- 2 tablespoons All-purpose flour
- 1 cup Milk
- 1/4 teaspoon Salt
- 1 each Egg yolk
Instructions
- 1Peel the onions under cold water. Place the onions in a stew-pan and cover with boiling water. Boil for 5 minutes, then drain.
- 2Cover the drained onions again with boiling water and cook for 10 minutes. Drain, recover with boiling water, and cook for another 10 minutes, or until tender.
- 3In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute, stirring constantly. Gradually whisk in the milk until smooth. Season with salt. Cook, stirring constantly, until the sauce thickens, about 3-5 minutes. Remove from heat.
- 4Gently stir the cooked onions into the hot white sauce. In a small bowl, whisk the egg yolk. While the sauce is still steaming hot, add the egg yolk and stir to combine. Serve immediately.
