Ingredients

  • 1 cup All-purpose flour
  • 2 teaspoons Baking powder
  • 1/4 teaspoon Ground cinnamon
  • 1/8 teaspoon Salt
  • 1/2 cup Granulated sugar
  • 1 each Egg
  • 2 tablespoons Butter, melted
  • 1/4 cup Water
  • 1/2 teaspoon Vanilla extract
  • 1/2 square Semi-sweet chocolate, melted
  • 1/2 cup Heavy cream
  • 1 teaspoon Sugar
  • 1/4 teaspoon Vanilla extract
  • 3 drops Lemon extract

Instructions

  1. 1In a medium bowl, whisk together the flour, baking powder, cinnamon, and salt.
  2. 2In a separate bowl, whisk together the sugar, egg yolk, water, and vanilla extract. Beat for 1 minute.
  3. 3In a separate bowl, beat the egg white until stiff peaks form. Gently fold the beaten egg white into the wet ingredients. Add the melted butter and mix well.
  4. 4Divide the batter in half. Add the melted chocolate to one half and mix well.
  5. 5Prepare a loaf-cake pan or a small round tin with waxed paper. Fill it with both mixtures, alternating a tablespoon of the plain mixture, then a tablespoon of the chocolate mixture, until all is used, creating a marbled appearance. Bake in a moderate oven at 350°F (175°C) for 30 minutes.
  6. 6In a bowl, beat the heavy cream until thick. Add the sugar, vanilla extract, and lemon extract. Place in a cool place until used.
