Sondesh
Sondesh is a famous Bengali sweet enjoyed across India for its simplicity and quick preparation. Made with minimal ingredients, it is often prepared during fasting periods.
Ingredients
- 6 cups Full cream milk
- 1 tablespoon Vinegar
- 0.5 cup Jaggery (Can substitute with 1/2 cup of sugar)
- 0.25 teaspoon Rose water
- 0.5 teaspoon Cardamom powder
Instructions
- 1Bring the full cream milk to a boil. Once boiled, remove from heat and add 1 tablespoon of vinegar, stirring gently to curdle the milk.
- 2Drain the curdled milk using a cloth and rinse with cold water to ensure the paneer remains soft and removes any vinegar flavor.
- 3Squeeze the cloth to remove excess water and place it on a wooden platform. Place a heavy object on the cloth for 10 minutes to expedite water removal.
- 4After removing excess water, take out the paneer and mash it with your hands until it becomes soft and shiny.
- 5Heat a pan and add the mashed paneer and jaggery. Cook on low flame for 3 to 4 minutes, stirring continuously.
- 6Add cardamom powder and rose water to the mixture. Mix well and allow it to cool for 5 minutes.
- 7Shape the mixture as desired and garnish with saffron or dry fruits.
