Sabudaana Vada (Tapioca Pearls or Sago Vada)

Sabudana vada is an authentic Maharashtrian dish made with boiled potatoes, roasted peanuts, and other basic ingredients. It is crispy, delicious, and tastes great with a simple coconut chutney or sweetened curd.

Ingredients

  • 2 cups Sabudana (tapioca pearls) (Soaked for 3 to 4 hours)
  • 1 cup Peanuts (Coarsely ground)
  • 4 units Potatoes, boiled
  • 6 units Green chillies (Finely chopped)
  • 8 units Curry leaves
  • 2 teaspoons Lemon juice
  • 1 teaspoon Sugar
  • 2 tablespoons Coriander leaves
  • 2 units Potatoes, grated (Grated and water drained)
  • 1 to taste Salt
  • 500 ml Oil (For deep frying)

Instructions

  1. 1Soak the sabudana in water for 3 to 4 hours until they become soft and can be easily mashed between your fingers.
  2. 2Boil the potatoes until tender. Roast the peanuts, let them cool, remove the husk, and coarsely grind them. Grate 2 potatoes and squeeze out excess water.
  3. 3In a large bowl, combine the soaked sabudana, boiled potatoes, grated potatoes, coarsely ground peanuts, green chillies, curry leaves, salt, sugar, lemon juice, and coriander leaves. Mix thoroughly with your hands or a spoon.
  4. 4Take portions of the mixture and shape them into flat, round patties.
  5. 5Heat oil in a pan over medium heat. Deep fry the sabudana vadas until they are golden brown. Transfer them to a kitchen towel to absorb excess oil.
  6. 6Serve the sabudana vadas hot with coconut chutney or sweetened curd.
