Instructions
- 1Combine the gram flour with salt, a small amount of red chilli powder, and turmeric. Mix to form a medium consistency batter. Fry small dumplings (pakodi) in a pan. Leftover pakodi can also be used.
- 2In a bowl, mix curd with red chilli powder, turmeric, and coriander powder until well combined.
- 3Heat vegetable oil in a pan until it reaches smoking point. Add mustard seeds and cumin seeds, allowing them to splutter.
- 4Add a pinch of asophoetida, followed by green chillies and curry leaves. Add ginger garlic paste and sauté for 5 seconds.
- 5Add finely chopped onions and a pinch of salt, sauté until onions become transparent. Stir in the curd mixture and continue stirring until it begins to boil. Add 1/2 cup of water and boil the gravy for 2 minutes until it starts releasing oil. Adjust salt as needed.
- 6Add the pakodi to the pan, pour in a little water, and reduce the heat to low. Allow to cook for a few minutes.
- 7Turn off the heat and garnish with kasoori methi. Serve hot with roti or rice.
