Corn Mayonnaise Sandwich

Ingredients
- 12 slices White bread (You can use any variety of bread)
- 1 cup Sweet corn (Boiled)
- 1 medium Onions (Finely chopped)
- 1 medium Capsicum (Finely chopped)
- 1 medium Carrot (Grated)
- 1 cup Mayonnaise
- 1 teaspoon Salt (As required)
- 1 teaspoon Black crushed pepper
- 1 teaspoon Oregano
- 2 tablespoons Tomato sauce
- 3 tablespoons Mozzarella cheese (Shredded)
- 0 as needed Butter (For spreading and greasing)
Instructions
- 1Wash all the vegetables thoroughly. Finely chop the onions and capsicum, and grate the carrot.
- 2Boil the sweet corn cob in a pressure cooker for 2 to 3 whistles. Allow it to cool, then carefully remove the corn kernels from the cob using a sharp knife.
- 3In a bowl, combine the chopped vegetables and corn. Add mayonnaise, salt, black pepper, and oregano. Mix well, ensuring the salt is adjusted as mayonnaise is already salty.
- 4Take two slices of bread. Spread butter on one slice and tomato sauce on the other.
- 5Spread the corn mayonnaise filling on the buttered slice. Sprinkle shredded mozzarella cheese over the filling. Cover with the other slice of bread.
- 6Heat a pan and grease it with butter. Place the sandwich on the pan and toast it until golden brown. Apply butter on the top side, flip, and toast the other side until crispy.
- 7Once the sandwich is toasted and crispy, serve it hot with coriander chutney or additional tomato sauce.
