Rice Payasam/Chawal Kheer

A traditional South Indian dessert made with rice, milk, and sugar, often prepared during festivals.

Ingredients

  • 1 liter Whole Milk (1 liter or 1000 milliliters)
  • 1 tablespoon White Rice
  • 5 tablespoons Sugar
  • 1 tablespoon Ghee
  • 8 pieces Cashews
  • 8 pieces Raisins

Instructions

  1. 1In a large vessel, bring 1 liter of milk to a boil. Once boiling, add the washed rice and continue to boil until the rice is nearly cooked.
  2. 2Add sugar to the boiling mixture and continue to cook, stirring intermittently, until the milk thickens and turns a light pink color.
  3. 3In a small pan, heat ghee and sauté the cashews and raisins until golden. Pour this mixture into the payasam.
  4. 4Once the payasam has reduced to about 3 cups, serve it hot.
