Instructions
- 1In a large vessel, bring 1 liter of milk to a boil. Once boiling, add the washed rice and continue to boil until the rice is nearly cooked.
- 2Add sugar to the boiling mixture and continue to cook, stirring intermittently, until the milk thickens and turns a light pink color.
- 3In a small pan, heat ghee and sauté the cashews and raisins until golden. Pour this mixture into the payasam.
- 4Once the payasam has reduced to about 3 cups, serve it hot.
