Baingan Tawa Fry | Begun Bhaja
Made with shallow-fried brinjal slices.
Ingredients
- 2 tbsp Besan (Gram flour)
- 1 tsp Cumin powder
- 1 tsp Amchoor (dried mango powder)
- 2 tsp Kashmiri chili powder
- 1 tsp Turmeric
- 0.5 tsp Salt (Adjust to taste)
- 10 units Brinjal
- 3 tbsp Mustard oil (Can substitute with any cooking oil)

Instructions
- 1In a bowl, combine the gram flour, cumin powder, dried mango powder, Kashmiri chili powder, turmeric, and salt. Mix thoroughly to create a uniform coating mixture.
- 2Trim the stems from the brinjals and slice them into 1 cm thick roundels. Ensure the slices are uniform to ensure even cooking.
- 3Coat each brinjal slice thoroughly with the prepared coating mixture, ensuring both sides are evenly covered.
- 4Heat mustard oil in a tawa over medium flame. Once hot, add the coated brinjal slices. Fry each side for 4-5 minutes until golden brown and cooked through.
- 5Remove the fried brinjal slices from the tawa and serve hot as a side dish with dal chawal or curd rice.
