Aloo Baingan Sabzi (Potato and Brinjal Sabzi)
A semi gravy dish made out of potato and brinjal.
Ingredients
- 3 medium sized Potato (Cut into medium-sized wedges)
- 7 small sized Brinjal (Cut into medium-sized wedges)
- 2 medium Tomatoes (Grind into a pulp)
- 2 medium Onions (Finely chopped)
- 5 unit Green Chillies (Finely chopped)
- 1 bunch Coriander Leaves (For garnish)
- 2 tablespoons Oil (For shallow frying)
- 1 teaspoon Turmeric
- 1 tablespoon Red Chilli Powder
- 2 teaspoons Jeera Powder
- 1 tablespoon Coriander Powder
- 1 teaspoon Salt (Adjust to taste)
- 4 unit Garlic Cloves (Finely chopped)
- 1 teaspoon Garam Masala
- 1 teaspoon Kasoori Methi (Crushed)
- 0.5 cup Water (Adjust consistency)

Instructions
- 1Cut the brinjal and potato into medium-sized wedges.
- 2In a pan, heat oil and shallow fry the brinjal and potato wedges until golden brown. Set aside.
- 3In the same pan, heat additional oil if needed. Add cumin, finely chopped onions, green chillies, and garlic. Cook until golden brown.
- 4Add turmeric, red chilli powder, coriander powder, garam masala, and jeera powder to the pan. Cook until the oil separates from the spices.
- 5Grind the tomatoes into a pulp and add to the pan. Cover and cook until the oil separates from the mixture.
- 6Add salt, the fried potato and brinjal, and water to the pan. Cover and cook until the vegetables are fully done.
- 7Garnish with coriander leaves and crushed kasoori methi. Serve hot with chapati or rice.
