Sheera | Sooji Halwa

A classic Indian dessert made with roasted semolina, ghee, and a fragrant blend of milk, sugar, and cardamom, resulting in a rich and aromatic halwa.

Ingredients

  • 1 cup Sooji (Coarse)
  • 1.5 cups Milk- 2%
  • 1.5 cups Water
  • 0.67 cup Sugar
  • 5 units Green cardamom pods
  • 0.5 cup Ghee

Instructions

  1. 1In a vessel, combine milk, water, sugar, and cardamom pods. Stir well to dissolve the sugar and heat until just before boiling. Remove from heat.
  2. 2In a separate pan, heat ghee over medium flame. Add the sooji and roast, stirring continuously, until it emits a pleasant aroma, ensuring it does not brown.
  3. 3Gradually add the heated milk mixture to the roasted sooji, stirring continuously to avoid lumps. Continue stirring until the mixture thickens and leaves the sides of the pan.
  4. 4Continue to stir until the halwa reaches the desired consistency, approximately 3-4 minutes. Serve hot.
