Sweet Wheat Porridge/Alsa
This is a sweet porridge made with wheat, enriched with milk and sweetened with sugar and condensed milk, offering a delightful taste of Indian Malabar and Kerala Muslim/Mappila cuisine.
Ingredients
- 2 cups Broken Wheat (Also known as dalia or bulgar wheat)
- 0.5 cup Whole Milk
- 3 tablespoons Condensed Milk
- 0.5 cup Sugar
- 2 tablespoons Ghee
- 0.25 teaspoon Salt
- 0.5 unit/count Onions (Sliced)
- 5 unit/count Cashews
- 5 unit/count Raisins
- 3 cups Water (Warm)

Instructions
- 1Place the broken wheat in a bowl, cover with water, and soak overnight. Drain and rinse well before use.
- 2Transfer the soaked wheat to a pressure cooker. Add whole milk, sugar, condensed milk, and salt. Mix well to combine.
- 3Add 3 cups of warm water to the pressure cooker. Seal and cook for 10 whistles on medium flame. Alternatively, cook for 30 minutes on medium flame if not using a pressure cooker.
- 4Turn off the heat and allow the pressure cooker to release pressure naturally. Once the pressure is fully released, open the cooker and stir the porridge.
- 5In a separate pan, heat 2 tablespoons of ghee over medium flame. Pour the heated ghee into the cooked wheat porridge and mix thoroughly.
- 6In a pan over medium flame, heat some ghee and sauté sliced onions, cashews, and raisins for about a minute. Transfer this garnish to the cooked porridge.
- 7Serve the sweet wheat porridge hot, garnished with the sautéed onions, cashews, and raisins.
