Ridge Gourd Side Dish/Peechingha Olan

A tasty side dish for rice, featuring ridge gourd cooked with spices and coconut oil.

Ingredients

  • 1 unit Ridge gourd (Cut into thin pieces)
  • 0.5 unit Onions (Finely sliced)
  • 1 unit Green chillies
  • 0.5 teaspoon Salt
  • 1 tablespoon Coconut oil
  • 1 teaspoon Mustard seeds
  • 1 unit Dry red chillies
  • 0.5 handful Curry leaves
  • 0.25 cup Water (For pressure cooking)

Instructions

  1. 1Cut the ridge gourd into thin pieces and place it in a pressure cooker after washing well.
  2. 2Add a little water, salt, chopped onions, and green chillies to the pressure cooker. Cook for 5 whistles.
  3. 3Allow the pressure cooker to release pressure completely on its own.
  4. 4Place a pan on medium flame and add coconut oil. Once hot, add mustard seeds, curry leaves, and dry red chillies. Transfer the tempering immediately to the cooked ridge gourd.
  5. 5Mix the tempered ingredients well with the cooked ridge gourd and serve hot with rice.
