Ridge Gourd Side Dish/Peechingha Olan
A tasty side dish for rice, featuring ridge gourd cooked with spices and coconut oil.
Ingredients
- 1 unit Ridge gourd (Cut into thin pieces)
- 0.5 unit Onions (Finely sliced)
- 1 unit Green chillies
- 0.5 teaspoon Salt
- 1 tablespoon Coconut oil
- 1 teaspoon Mustard seeds
- 1 unit Dry red chillies
- 0.5 handful Curry leaves
- 0.25 cup Water (For pressure cooking)
Instructions
- 1Cut the ridge gourd into thin pieces and place it in a pressure cooker after washing well.
- 2Add a little water, salt, chopped onions, and green chillies to the pressure cooker. Cook for 5 whistles.
- 3Allow the pressure cooker to release pressure completely on its own.
- 4Place a pan on medium flame and add coconut oil. Once hot, add mustard seeds, curry leaves, and dry red chillies. Transfer the tempering immediately to the cooked ridge gourd.
- 5Mix the tempered ingredients well with the cooked ridge gourd and serve hot with rice.
