Instructions

  1. 1Boil three eggs until hard-boiled, then cut each into four equal parts and set aside.
  2. 2In a pan over medium heat, sauté the crushed onions, ginger, and green chillies. Add salt, turmeric powder, and black pepper, mixing well. Continue to sauté until the onions are soft.
  3. 3Boil the potatoes until cooked, then mash them well. Add the mashed potatoes to the pan with the onion masala and mix thoroughly. Cook for 1-2 minutes, ensuring the potatoes are not overcooked.
  4. 4Stir in the coriander leaves and mix well. Turn off the heat and allow the mixture to cool.
  5. 5Shape the potato mixture into medium-sized balls. Flatten slightly, place a piece of egg in the center, and roll to enclose the egg. Repeat for all pieces.
  6. 6Beat one egg in a bowl. Dip each potato-egg ball into the beaten egg, then roll in vermicelli to coat evenly.
  7. 7Heat vegetable oil in a pan over medium heat. Fry the vermicelli-coated balls until golden brown. Serve hot with tea or coffee.
