Egg Curry (Kerala style)
Egg curry is an easy curry, prepared with boiled eggs simmered in coconut milk based creamy gravy along with other Indian spices.
Instructions
- 1Boil three eggs until hard-boiled, then cut each into four equal parts and set aside.
- 2In a pan over medium heat, sauté the crushed onions, ginger, and green chillies. Add salt, turmeric powder, and black pepper, mixing well. Continue to sauté until the onions are soft.
- 3Boil the potatoes until cooked, then mash them well. Add the mashed potatoes to the pan with the onion masala and mix thoroughly. Cook for 1-2 minutes, ensuring the potatoes are not overcooked.
- 4Stir in the coriander leaves and mix well. Turn off the heat and allow the mixture to cool.
- 5Shape the potato mixture into medium-sized balls. Flatten slightly, place a piece of egg in the center, and roll to enclose the egg. Repeat for all pieces.
- 6Beat one egg in a bowl. Dip each potato-egg ball into the beaten egg, then roll in vermicelli to coat evenly.
- 7Heat vegetable oil in a pan over medium heat. Fry the vermicelli-coated balls until golden brown. Serve hot with tea or coffee.
