Kachumbar/veg curd salad

Ingredients

  • 1 cup Curd (Can substitute with plain yogurt)
  • 1 teaspoon Cumin seeds
  • 2 medium Onions, finely chopped (Medium sized and finely chopped)
  • 1 medium Tomatoes, finely chopped (Medium sized and finely chopped)
  • 2 medium Green chillies, finely crushed (Finely crushed)
  • 1 medium Carrot, finely chopped (Medium sized and finely chopped)
  • 0.5 medium Cucumber, finely chopped (Half of a medium sized cucumber, finely chopped)
  • 1 teaspoon Salt (Adjust to taste)
  • 1 teaspoon Black crushed pepper (Adjust to taste)
  • 1 handful Coriander leaves (Finely chopped)

Instructions

  1. 1In a pan over low heat, add cumin seeds. Then add the onions, tomatoes, green chillies, carrot, and cucumber. Sauté for just two minutes without adding any oil.
  2. 2Transfer the sautéed vegetables to a mixing bowl. Add the coriander leaves, curd, and mix well.
  3. 3Adjust the salt and add the crushed black pepper. Mix thoroughly to combine all ingredients.
  4. 4The Kachumbar salad is ready to be enjoyed. Serve it as a side dish with rice or biryani.
