Pachadi
A simple and easy South Indian side dish made with cucumber, coconut, and spices, perfect for lunch or dinner.
Ingredients
- 1 unit Cucumber (Peel and cut finely)
- 0.25 teaspoon Salt
- 0.5 unit Coconut, shredded
- 2 units Green chillies
- 0.5 teaspoon Mustard seeds (Divided use)
- 1 pinch Sugar (Optional)
- 1 unit Dry red chillies
- 0.25 teaspoon Fenugreek seeds (Less than 1/4 tsp)
- 1 sprig Curry leaves

Instructions
- 1Peel and finely chop the cucumber. Cook it with a small amount of water and salt until just tender, then remove from heat.
- 2Grind the shredded coconut and green chillies into a fine paste. Add 1/4 teaspoon of mustard seeds and a pinch of sugar, then grind briefly again. Mix this paste into the cooked cucumber.
- 3In a small pan, heat and splutter the remaining mustard seeds. Add the dry red chilli, fenugreek seeds, and curry leaves. Pour this tempering over the cucumber mixture.
- 4Mix everything well to combine. Pachadi is ready to be served.
