Sweat Banana-Egg Fry/Kaaya Vaattiyadh

A simple and delicious breakfast dish from Kerala, featuring ripe bananas and eggs fried to perfection with coconut oil and ghee.

Ingredients

  • 2 units Banana, ripe (Use ripe bananas for best flavor)
  • 2 units Egg
  • 1 tablespoon Sugar
  • 1 teaspoon Ghee
  • 2 tablespoons Coconut oil

Instructions

  1. 1Slice the ripe bananas evenly. Heat a pan over medium flame.
  2. 2Add coconut oil to the heated pan. Once hot, add the sliced bananas and sauté until they are soft and golden brown.
  3. 3Sprinkle sugar over the bananas and mix well. Beat the eggs and add them to the pan, scrambling them and mixing with the bananas.
  4. 4Add one teaspoon of ghee to the mixture and stir well to combine. Optionally, add grated coconut for extra flavor.
  5. 5Serve the Malabar Kaaya Vaattiyadh hot, accompanied by tea or coffee.
