Coconut Stuffed Banana/Kaaya Nirachadh

This is a sweet Malabar snack which is very simple to make.

Ingredients

  • 3 units Nendra banana (Medium ripe or full ripe banana)
  • 1 cup Coconut, grated
  • 0.5 cup Sugar
  • 1 teaspoon Cardamom powder
  • 1 cup Sunflower oil
  • 1 tablespoon Ghee

Instructions

  1. 1Cut the Nendra bananas in half and make a small incision in the center of each piece.
  2. 2Place a pan over low heat and add ghee. Stir in the grated coconut and cardamom powder. Sauté for 4-5 minutes until the mixture is fragrant and well combined.
  3. 3Heat sunflower oil in a pan over medium heat. Once hot, carefully add the banana halves and fry until they are golden brown.
  4. 4Remove the fried bananas from the oil and allow them to cool slightly. Fill the center incision with the coconut mixture. Serve warm with a cup of tea.
