Coconut Stuffed Banana/Kaaya Nirachadh
This is a sweet Malabar snack which is very simple to make.
Ingredients
- 3 units Nendra banana (Medium ripe or full ripe banana)
- 1 cup Coconut, grated
- 0.5 cup Sugar
- 1 teaspoon Cardamom powder
- 1 cup Sunflower oil
- 1 tablespoon Ghee
Instructions
- 1Cut the Nendra bananas in half and make a small incision in the center of each piece.
- 2Place a pan over low heat and add ghee. Stir in the grated coconut and cardamom powder. Sauté for 4-5 minutes until the mixture is fragrant and well combined.
- 3Heat sunflower oil in a pan over medium heat. Once hot, carefully add the banana halves and fry until they are golden brown.
- 4Remove the fried bananas from the oil and allow them to cool slightly. Fill the center incision with the coconut mixture. Serve warm with a cup of tea.
