Jackfruit Stir Fry/Chakka Varavu Kaachiyadh

A simple and healthy jackfruit stir fry, perfect as a side dish for lunch, featuring jackfruit and its seeds cooked with spices and coconut oil.

Ingredients

  • 1000 unit/count Jackfruit (Jackfruit and its seeds are also taken)
  • 1 unit/count Onions, finely chopped (Finely chopped)
  • 3 unit/count Green chillies, finely chopped (Finely chopped)
  • 5.5 unit/count Garlic cloves
  • 2 unit/count Dried red chillies
  • 1 handful Curry leaves
  • 1 tsp Mustard seeds
  • 4 tbsp Coconut oil
  • 1 tsp Turmeric powder
  • 2 tsp Salt
  • 2 cups Water (For cooking jackfruit)

Instructions

  1. 1Cut and clean the jackfruit and its seeds, ensuring to peel off the skin of the seeds.
  2. 2In a pan, cook the jackfruit and seeds with water, salt, and turmeric powder over medium flame for 25 minutes until well cooked.
  3. 3In another pan, heat coconut oil. Add onions, green chillies, garlic, and salt. Sauté until the onions are translucent.
  4. 4Transfer the cooked jackfruit into the pan with sautéed aromatics. Mix well and adjust the salt to taste.
  5. 5In a separate pan, heat coconut oil. Add mustard seeds, dried red chillies, and curry leaves. Fry until the mustard seeds start to pop.
  6. 6Immediately transfer the seasoning to the cooked jackfruit mixture. Mix thoroughly to combine all flavors.
  7. 7Serve the jackfruit stir fry hot as a side dish for lunch.
