Cryspy Ladies Finger Fry/Vendakka Fry

A very crispy, spicy, and delicious side dish perfect for pairing with rice. This dish features finely chopped ladies finger, seasoned with spices and fried to perfection.

Ingredients

  • 6.5 units Ladies finger (okra), finely chopped (Use 6-7 units, finely chopped)
  • 2 units Green chillies, finely chopped (Finely chopped)
  • 0.5 handful Curry leaves, finely chopped (Finely chopped)
  • 1 teaspoon Salt
  • 0.5 teaspoon Turmeric powder
  • 2 tablespoons Red chilli powder
  • 1 teaspoon Kashmiri chili powder
  • 1 tablespoon Corn flour
  • 1 tablespoon Rice flour
  • 1 cup Vegetable oil

Instructions

  1. 1In a mixing bowl, combine the finely chopped ladies finger, curry leaves, green chillies, and salt. Mix thoroughly to ensure even seasoning.
  2. 2Add the red chilli powder, turmeric powder, Kashmiri chilli powder, corn flour, and rice flour to the bowl. Mix well, adding a small amount of water to form a coating on the vegetables. Allow to marinate for 5-10 minutes.
  3. 3Heat vegetable oil in a pan over medium flame. Once hot, carefully add the marinated ladies finger mixture. Fry until the vegetables are crispy and cooked through.
  4. 4Remove from heat and serve the crispy ladies finger fry hot, paired with rice and sambhar.
