Ingredients

  • 3 tbsp Oil
  • 1 tsp Mustard seeds
  • 0.5 tsp Cumin seeds
  • 1.25 cup Onions, finely chopped (Finely chopped)
  • 1.5 cup Tomato puree
  • 0.75 cup Curd
  • 2 tsp Coriander powder
  • 1.25 tsp Cumin powder
  • 1.5 tsp Garam masala (Garam masala powder)
  • 0.5 cup Water
  • 2 unit/count Green chillies, slit (Slit)
  • 2 tsp Ginger garlic paste
  • 2 tsp Red chilli powder
  • 1.5 tsp Salt (Adjust accordingly)
  • 3 tbsp Coriander leaves
  • 0.25 tsp Turmeric
  • 500 gms Okra
  • 0.75 cup Besan

Instructions

  1. 1Wash the okra thoroughly and pat dry with a cloth. Chop the okra into 1-inch pieces. In a dry bowl, combine the chopped okra with salt and red chilli powder, mixing thoroughly to coat.
  2. 2Add water to the okra mixture and mix well to ensure the spices and besan coat the okra evenly. Heat oil in a pan and cook the mixture until 95% done.
  3. 3In a separate pan, heat oil and add mustard seeds and cumin seeds. Once they splutter, add slit green chillies and finely chopped onions. Sauté until the onions turn translucent.
  4. 4Add ginger garlic paste to the pan and sauté until the raw aroma dissipates.
  5. 5Add the tomato puree to the pan and mix thoroughly. Incorporate turmeric powder, coriander powder, cumin powder, salt, and red chilli powder. Cover and cook until the oil separates from the mixture.
  6. 6Whisk the curd and add it to the pan. Mix well, cover, and cook until the oil floats on top.
  7. 7Add the cooked okra mixture to the pan, followed by water and garam masala powder. Mix well and let it simmer for about 5 minutes.
  8. 8Finish by adding coriander leaves as a garnish. Serve hot with Rotis, Chappathis, or Rice.
