Kerala style okra shallow fry.
Ingredients
- 13 units Okra (Also known as ladies finger, bhindi, or bendekai.)
- 5 tablespoons Coconut oil
- 2 teaspoons Mustard seeds
- 2 units Dry red chillies
- 2 units White onions
- 2 units Green chillies
- 2 sprigs Curry leaves
- 1 cup Coconut, shredded
- 1 teaspoon Turmeric (Also known as haldi.)
- 2 teaspoons Salt

Instructions
- 1Clean the okra and gently wipe it with a cloth to ensure it is completely dry, as any moisture can make it sticky during cooking.
- 2Heat a pan and add coconut oil. Once hot, add mustard seeds and allow them to splutter. Then add dry red chillies and curry leaves, sautéing them briefly to release their flavors.
- 3Add chopped white onions and green chillies to the pan. Sauté until the onions are translucent and the chillies are fragrant.
- 4Add the chopped okra to the pan. Stir well and cook without covering to prevent it from becoming sticky. Ensure even cooking by stirring occasionally.
- 5Finally, add salt, turmeric, and shredded coconut to the pan. Sauté for a few more minutes until the coconut is well incorporated and the okra is cooked through.
