Bitter Gourd Masala/Kayppakka Masala
A very healthy side dish for rice, featuring bitter gourd cooked with spices and coconut oil, perfect for a nutritious meal.
Ingredients
- 1 unit Bitter gourd (Also known as karela)
- 0.5 unit Onions
- 1 unit Green chillies
- 0.5 handful Curry leaves
- 0.5 teaspoon Salt
- 0.5 teaspoon Turmeric (Also known as haldi)
- 1 teaspoon Chilli powder (Also known as red chilli powder)
- 1 teaspoon Mustard seeds
- 2 tablespoons Coconut oil
- 0.5 teaspoon Garam masala
- 0.25 cup Water (For cooking bitter gourd)

Instructions
- 1Slice the bitter gourd and wash it thoroughly. Place it in a pan with a little water, turmeric powder, and salt. Cook over medium heat for 5 minutes.
- 2In another pan over medium heat, add coconut oil. Once hot, add mustard seeds, chopped onion, green chilli, and salt. Sauté until the onion becomes transparent.
- 3Add turmeric powder, chilli powder, and garam masala to the pan. Mix well to combine the spices with the sautéed ingredients.
- 4Transfer the cooked bitter gourd into the pan with the spices. Mix well and add curry leaves. Cook for an additional 2 minutes.
- 5Turn off the heat and serve the bitter gourd masala hot with rice.
