Instructions
- 1Wash the bitter gourd thoroughly and cut it into small cubes. Cook the cubes in water until they are half done. Add 1/2 teaspoon of turmeric powder and red chilli powder. Ensure that by the time the bitter gourd is half cooked, the water has completely evaporated.
- 2In a flat pan, heat the oil. Once hot, add the half-cooked bitter gourd, remaining turmeric, and red chilli powder. Sauté for 2 to 3 minutes.
- 3Add salt to the pan, cover with a lid, and cook until the bitter gourd is completely cooked.
- 4Finally, add the powdered jaggery and cook for another 2 to 3 minutes without the lid. Adjust the quantity of jaggery according to your preference for sweetness.
- 5The karela sabji is ready to be served. It pairs well with rice and curry, offering a delightful balance of flavors.
