Yellow Cucumber Curry
A simple and flavorful curry made with yellow cucumber, perfect for pairing with puri or rice.
Ingredients
- 1000 grams Mangalore cucumber
- 3 medium Onions, chopped (Medium sized, chopped)
- 5 medium Tomatoes, chopped (Medium sized, chopped)
- 3 count Green chillies, slit (Slit or broken)
- 1 teaspoon Mustard seeds
- 0.75 teaspoon Cumin seeds
- 6 tablespoons Oil
- 1 tablespoon Coriander powder
- 0.5 tablespoon Cumin powder
- 2.5 teaspoons Salt (Adjust to taste)
- 2 teaspoons Red chilli powder
- 1 sprig Coriander leaves (Chopped)
- 1 sprig Curry leaves
- 1.5 teaspoons Ginger garlic paste
- 0.25 teaspoon Turmeric
- 0.5 tablespoon Sugar (To balance flavors)

Instructions
- 1In a heated pan, add the oil. Once hot, add the mustard seeds and cumin seeds. Allow them to crackle before adding the green chillies and curry leaves. Sauté briefly.
- 2Add the chopped onions to the pan and sauté until they become translucent.
- 3Add the chopped cucumber pieces to the pan. Reduce the heat to low, cover with a lid, and cook, stirring occasionally, until the cucumber is tender.
- 4Incorporate the chopped tomatoes into the pan and mix well. Add salt, red chilli powder, coriander powder, and cumin powder. Cook until the tomatoes become mushy.
- 5Add sugar to balance the flavors. Garnish with chopped coriander leaves before serving.
