Garlic Chutney

A flavorful chutney perfect for pairing with idli and dosas, featuring garlic, coconut, and a blend of spices.

Ingredients

  • 8 units Garlic cloves
  • 1 cup Coconut, grated
  • 1 teaspoon Salt (As required)
  • 4 units Dried Kashmiri red chillis
  • 1 teaspoon Tamarind, raw
  • 1 handful Mustard seeds
  • 4 units Curry leaves
  • 3 tablespoons Toor Dal
  • 2 tablespoons Oil (For frying)
  • 0.5 cup Water (As required for blending)

Instructions

  1. 1Peel and halve the garlic cloves. Soak the raw tamarind in cold water for 30 minutes to soften.
  2. 2Heat oil in a pan over medium heat. Add the toor dal and fry until light brown. Add the garlic cloves and dried Kashmiri red chillis, and continue frying for 1 minute.
  3. 3Transfer the fried ingredients to a blender. Add the grated coconut, soaked tamarind, and salt. Blend while gradually adding water until a smooth chutney consistency is achieved.
  4. 4In a small pan, heat oil and fry the mustard seeds, curry leaves, and one additional dried red chilli for 1 minute. Mix this tempering into the chutney before serving.
