Paalak Mungedi ki Sabzi

Spinach is an iron-rich vegetable and a very healthy leafy vegetable but as people go for taste first, so here's a way of making this healthy vegetable tasty.

Ingredients

  • 500 gms Spinach
  • 1 cup Mungedi (Mungedi or Badi, which you will get in the market easily.)
  • 2 units Tomatoes (2 tomatoes if big in size)
  • 3 units Green chillies
  • 1.5 spoons Oil
  • 0.5 tsp Red chilli powder
  • 0.5 tsp Turmeric powder
  • 1 tsp Coriander powder
  • 0.5 tsp Salt
  • 0.5 tsp Cumin seeds
  • 0.5 cup Water

Instructions

  1. 1Chop the spinach and wash it thoroughly two times to ensure it is clean.
  2. 2Chop the tomatoes into small pieces and slice the green chillies into halves.
  3. 3Heat oil in a pan over medium heat. Add the cumin seeds and allow them to crackle.
  4. 4Add the red chilli powder, turmeric powder, coriander powder, and salt to the pan. Sauté the spices briefly to release their flavors.
  5. 5Add the mungedi to the pan, followed by hot water. Bring the mixture to a boil and cover the pan for 1-2 minutes.
  6. 6Add the spinach to the pan. Sauté briefly, then cover and cook until the spinach is tender, stirring occasionally.
