Paalak Mungedi ki Sabzi

Ingredients
- 500 gms Spinach
- 1 cup Mungedi (Mungedi or Badi, which you will get in the market easily.)
- 2 units Tomatoes (2 tomatoes if big in size)
- 3 units Green chillies
- 1.5 spoons Oil
- 0.5 tsp Red chilli powder
- 0.5 tsp Turmeric powder
- 1 tsp Coriander powder
- 0.5 tsp Salt
- 0.5 tsp Cumin seeds
- 0.5 cup Water

- 1Chop the spinach and wash it thoroughly two times to ensure it is clean.
- 2Chop the tomatoes into small pieces and slice the green chillies into halves.
- 3Heat oil in a pan over medium heat. Add the cumin seeds and allow them to crackle.
- 4Add the red chilli powder, turmeric powder, coriander powder, and salt to the pan. Sauté the spices briefly to release their flavors.
- 5Add the mungedi to the pan, followed by hot water. Bring the mixture to a boil and cover the pan for 1-2 minutes.
- 6Add the spinach to the pan. Sauté briefly, then cover and cook until the spinach is tender, stirring occasionally.
