Lauki ka Halwa (Bottle Gourd)
Bottle gourd is often considered a flavorless vegetable, but when prepared as Lauki ka Halwa, it transforms into a delightful dessert that appeals to all ages.
Ingredients
- 1 medium Bottle gourd, peeled and grated
- 0.5 cup Sugar
- 1 cup Whole milk
- 1 tablespoon Ghee
- 1 teaspoon Cardamom powder
- 1 cup Malai (cream) (Collected from milk over a week)
- 1 handful Dry fruits, chopped (Exclude raisins for better taste)

Instructions
- 1Peel, wash, and grate the bottle gourd.
- 2In a pan, heat the ghee and add the grated bottle gourd. Roast until it begins to dry.
- 3In a separate container, bring the milk to a boil while continuously stirring the bottle gourd in the pan.
- 4Once the bottle gourd is dry, add the boiled milk and stir continuously until the milk is absorbed. Add cardamom powder.
- 5Stir in the malai and continue to cook until it melts completely.
- 6Add sugar and stir until the mixture thickens and ghee begins to separate.
- 7Turn off the heat and sprinkle chopped dry fruits over the halwa before serving.
