Lauki ka Halwa (Bottle Gourd)

Bottle gourd is often considered a flavorless vegetable, but when prepared as Lauki ka Halwa, it transforms into a delightful dessert that appeals to all ages.

Ingredients

  • 1 medium Bottle gourd, peeled and grated
  • 0.5 cup Sugar
  • 1 cup Whole milk
  • 1 tablespoon Ghee
  • 1 teaspoon Cardamom powder
  • 1 cup Malai (cream) (Collected from milk over a week)
  • 1 handful Dry fruits, chopped (Exclude raisins for better taste)

Instructions

  1. 1Peel, wash, and grate the bottle gourd.
  2. 2In a pan, heat the ghee and add the grated bottle gourd. Roast until it begins to dry.
  3. 3In a separate container, bring the milk to a boil while continuously stirring the bottle gourd in the pan.
  4. 4Once the bottle gourd is dry, add the boiled milk and stir continuously until the milk is absorbed. Add cardamom powder.
  5. 5Stir in the malai and continue to cook until it melts completely.
  6. 6Add sugar and stir until the mixture thickens and ghee begins to separate.
  7. 7Turn off the heat and sprinkle chopped dry fruits over the halwa before serving.
