Kesariya Bhaat (Saffron Rice)
'Kesariya' sirf ishq hi nahi, Kesariya bhaat bhi ho sakta hai. You wouldn't have heard of this dish, had you? This is generally made during auspicious occasions by the Marwari people. This tastes no less than ghee ke laddoos if made right.
Ingredients
- 1 cup Joha Rice (You can use any type of rice but this rice suits best in this dish)
- 2 cups Water
- 1 cup Sugar
- 1 pinch Yellow Food Coloring
- 5 units Almonds
- 5 units Cashews (You can add raisins also, according to your taste)
- 5 units Cardamom Powder
- 5 units Cloves
- 1 spoon Ghee
- 6 units Saffron

Instructions
- 1Rinse the rice thoroughly, approximately three times, and soak it in water for at least 30 minutes.
- 2In a pressure cooker, heat the ghee until it is hot.
- 3Once the ghee is heated, add the cloves and cardamom powder to the cooker.
- 4Drain the soaked rice and add it to the cooker. Sauté for 1 minute.
- 5Pour 2 cups of warm or boiled water into the cooker and add 1 cup of sugar. Stir to combine.
- 6Add the saffron strands to the mixture. This is the key ingredient for flavor and color.
- 7Seal the pressure cooker and cook until you hear three whistles. Then, turn off the heat.
