Hari Mirch (Green Chillies) Fry

This is a very easy-to-make dish that can also be stored for a week. It goes well with chapatis and parathas.

Ingredients

  • 30 units Green chillies
  • 0.5 teaspoon Mustard seeds
  • 0.5 teaspoon Cumin seeds
  • 0.25 teaspoon Red chilli powder
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Fennel seeds
  • 1 teaspoon Amchoor (dried mango powder)
  • 0.5 teaspoon Mustard seeds powder
  • 1 spoon Oil
  • 0.5 teaspoon Salt
  • 1 pinch Hing (asafetida)
  • 0.5 teaspoon Fennel seeds powder

Instructions

  1. 1In a pan, heat the oil until it is hot.
  2. 2Add cumin seeds, mustard seeds, and fennel seeds to the hot oil. Allow them to crackle, then turn off the stove and add a pinch of hing.
  3. 3Add turmeric powder, red chilli powder, mustard seeds powder, fennel seeds powder, amchoor, and salt to the pan. Turn the stove back on.
  4. 4Add the chopped green chillies to the pan.
  5. 5On high flame, sauté the mixture for a few seconds, then turn off the stove.
  6. 6If you wish to store the dish for a longer period, add one teaspoon of vinegar after the mixture has cooled down.
