Puran Poli
A traditional Maharashtrian sweet flatbread, Puran Poli is prepared during the Holi festival. It features a filling made from chana dal and jaggery, encased in a soft wheat flour dough.
Ingredients
- 2 cups Wheat flour

Instructions
- 1Rinse the chana dal thoroughly and soak it in water overnight. Drain and transfer to a pot with 2 cups of water. Cook until tender, then drain the excess water.
- 2In a kadai, combine the cooked chana dal and jaggery. Cook over medium heat, stirring continuously, until the mixture thickens and leaves the sides of the pan.
- 3Allow the puran mixture to cool completely. Pass it through a puran vessel to achieve a smooth, lump-free consistency.
- 4In a large bowl, combine wheat flour, oil, salt, and water. Knead into a soft dough, cover, and let it rest for 1 hour, kneading 2 to 3 times during this period.
- 5Divide the dough into equal portions and roll each into a ball. Flatten each ball, place 2 to 3 tablespoons of puran in the center, and fold the dough over the filling. Roll out gently into a thin disc.
- 6Heat a tava over medium heat. Place the rolled puran poli on the tava, apply a little oil, and cook until golden brown spots appear on both sides.
- 7Serve the puran poli warm, ideally with a side of dal or as is. Enjoy the sweet and savory flavors.
