Mysore Pak
Mysore Pak is a traditional Indian sweet snack made from chickpea flour, ghee, and sugar, known for its rich, melt-in-the-mouth texture.
Ingredients
- 1.5 cups Chickpea Flour (Also known as gram flour or besan)
- 1 cup Ghee
- 0.5 cup Oil
- 1.5 cups Sugar
- 0.5 cup Water

Instructions
- 1In a small kadai, combine the ghee and oil. Heat over a medium flame until hot, then reduce to low and maintain the temperature while preparing the Mysore Pak.
- 2In a large kadai, combine the sugar and water. Heat over medium flame, stirring until the sugar completely dissolves. Gradually add the chickpea flour, stirring continuously to avoid lumps, until a smooth, semi-liquid consistency is achieved.
- 3Add 2 tablespoons of the hot ghee and oil mixture to the chickpea flour and sugar syrup, stirring continuously. Repeat this process every minute, adding 2 tablespoons at a time, until only 2 tablespoons of the ghee and oil mixture remain. Stir vigorously to ensure the mixture froths and develops holes.
- 4When the mixture begins to change color and pull away from the sides of the kadai, add the remaining 2 tablespoons of ghee and oil. Stir briefly, then turn off the heat. Pour the mixture into a ghee-coated or butter paper-lined square box, spreading it evenly with a spatula.
- 5Allow the mixture to cool for 5 minutes, then make shallow cuts with a sharp knife to the desired size. Once fully cooled, cut through completely and invert the box onto a tray. Mysore Pak is ready to be served.
