Mint Rice
Mint rice or podhina rice prepared with the flavor of mint leaves.
Ingredients
- 2 cups Mint leaves
- 1 unit White onions
- 1 unit Cinnamon stick
- 4 units Cloves
- 3 units Bay leaves
- 2 units Marathi moggu
- 0.5 teaspoon Shahi jeera
- 1 cup Basmati rice (Soaked for 20 minutes)
- 3 tablespoons Ghee
- 3 tablespoons Sunflower oil
- 2 units Green chillies
- 0.5 inch Ginger
- 5 units Garlic flakes
- 2 tablespoons Curd
- 1 cup Green peas
- 1.5 cups Water (For cooking rice)

Instructions
- 1Rinse the basmati rice thoroughly and soak it in water for 20 minutes. Meanwhile, in a blender, combine the mint leaves, curd, ginger, green chillies, and garlic flakes. Blend until a smooth paste is formed.
- 2Heat the ghee and sunflower oil in a pressure cooker over medium heat. Add the bay leaves, cinnamon stick, cloves, and marathi moggu. Sauté for a few seconds until aromatic. Add the shahi jeera and continue to sauté briefly. Then, add the thinly sliced onions and cook until they are soft.
- 3Add the ground mint paste to the cooker and sauté until the raw aroma disappears.
- 4Pour in 1.5 cups of water and add the green peas. Bring to a boil. Add the soaked rice and wait for it to boil again. Secure the lid and cook for one whistle on medium heat.
