Cheera Uperi
A traditional Indian Malabar dish featuring sautéed red amaranthus with coconut and spices, offering a delightful blend of flavors and textures.
Ingredients
- 1 bunch Cheera (Red Amaranthus) (Also known as Red Spinach)
- 4 tbsp Sunflower oil
- 3 units Dry red chillies
- 6 units Garlic flakes
- 2 tbsp White rice (Used for seasoning)
- 1 cup Coconut, shredded
- 1 tsp Salt (Adjust to taste)
Instructions
- 1Thoroughly wash the cheera three times in water. Allow it to dry for a few minutes, then chop it into small pieces.
- 2Transfer the chopped cheera to a clay cooking pot. Add salt, cover with a lid, and cook on low heat for a few minutes. No additional water is needed.
- 3Remove the lid and add the shredded coconut to the cheera. Mix gently to combine.
- 4In a separate pan, heat the sunflower oil. Add crushed garlic flakes, dry red chillies, and white rice. Sauté until the mixture turns golden brown.
- 5Add the prepared seasoning to the cheera mixture. Mix well to ensure even distribution of flavors. Serve hot.
