Rice Poha

Poha is one of the easiest and simple morning breakfast recipes.

Ingredients

  • 4 cups Poha, thick (Thick poha)
  • 50 grams Peanuts
  • 2 units Onions
  • 3 units Green chillies
  • 2 tablespoons Lemon juice
  • 15 units Curry leaves
  • 0.5 teaspoon Mustard seeds
  • 0.5 teaspoon Cumin seeds
  • 1 pinch Sugar
  • 0.5 teaspoon Turmeric
  • 1 teaspoon Salt (To taste)
  • 3 tablespoons Olive oil
  • 0.5 bunch Coriander leaves

Instructions

  1. 1Place the poha in a strainer and pour a jug of water over it. Tap the strainer to remove excess water and allow the poha to soak for 10 minutes.
  2. 2Heat a pan over medium flame and add the peanuts. Roast them for 2 to 3 minutes, stirring continuously. Remove the roasted peanuts and set aside.
  3. 3In the same pan, heat the olive oil. Add cumin seeds and mustard seeds. Once they begin to splutter, add the green chillies and curry leaves. Fry for a few seconds, then add sugar and mix well.
  4. 4Chop the onions and add them to the pan. Fry on low-medium flame until golden brown. Add turmeric powder, mix well, and cook for a few seconds until the raw aroma of the spices dissipates. Add the roasted peanuts and combine.
  5. 5Add the soaked poha to the pan. Gently mix to combine all ingredients. Cover the pan and cook on low flame for 1 minute. Uncover, stir, and add lemon juice and coriander leaves. Mix thoroughly.
  6. 6Cover the pan again and cook for another minute on low flame. Uncover, stir, and turn off the heat. Serve hot, ideally accompanied by a cup of tea.
