Kadhai Paneer/Indian Cottage Cheese and Vegetables Curry

This is one of the most famous North Indian curries. Enjoy it with Indian bread or Naan for the best taste.

Ingredients

  • 500 gms Paneer
  • 5 unit/count Tomatoes
  • 4 unit/count Onions
  • 1 unit/count Capsicum
  • 3 unit/count Green chillies
  • 1 tbsp Ginger garlic paste
  • 0.5 tbsp Cumin seeds
  • 0.5 tbsp Mustard seeds
  • 2 unit/count Bay leaves
  • 3 unit/count Cloves
  • 2 tbsp Oil
  • 1 tbsp Salt
  • 0.5 tbsp Red chilli powder
  • 0.5 tbsp Turmeric
  • 1 tbsp Coriander powder
  • 0.5 tbsp Garam masala
  • 2 tbsp Water

Instructions

  1. 1In a cookware, heat 1 tablespoon of oil. Sauté 3 chopped onions, 5 tomatoes, and 3 green chillies for 3-4 minutes until softened.
  2. 2Grind the sautéed vegetables into a smooth puree.
  3. 3In a kadhai or cookware, heat 1 tablespoon of oil. Add 1/2 tablespoon of cumin seeds, 1/2 tablespoon of mustard seeds, 2 bay leaves, and 3 cloves. Cook until the spices turn brown and aromatic.
  4. 4Add the ginger garlic paste to the spices and cook for 2 minutes until fragrant.
  5. 5Mix 1/2 tablespoon of red chilli powder, 1/2 tablespoon of turmeric powder, 1 tablespoon of coriander powder with 2 tablespoons of water to form a paste. Add this paste to the kadhai and cook for 4-5 minutes.
  6. 6Add the vegetable puree to the kadhai and cook for 10 minutes. Season with salt.
  7. 7In another pan, sauté 1 chopped onion and 1 capsicum until slightly softened.
  8. 8Add the sautéed onion and capsicum to the curry and cook for 2 minutes.
  9. 9Gently add the paneer cubes to the curry and cook for 5 minutes.
  10. 10Stir in the garam masala and cook for an additional 2 minutes.
  11. 11The curry is ready. Serve it hot with your choice of Indian bread or Naan.
