Kadhai Paneer/Indian Cottage Cheese and Vegetables Curry

- 500 gms Paneer
- 5 unit/count Tomatoes
- 4 unit/count Onions
- 1 unit/count Capsicum
- 3 unit/count Green chillies
- 1 tbsp Ginger garlic paste
- 0.5 tbsp Cumin seeds
- 0.5 tbsp Mustard seeds

Instructions
- 1In a cookware, heat 1 tablespoon of oil. Sauté 3 chopped onions, 5 tomatoes, and 3 green chillies for 3-4 minutes until softened.
- 2Grind the sautéed vegetables into a smooth puree.
- 3In a kadhai or cookware, heat 1 tablespoon of oil. Add 1/2 tablespoon of cumin seeds, 1/2 tablespoon of mustard seeds, 2 bay leaves, and 3 cloves. Cook until the spices turn brown and aromatic.
- 4Add the ginger garlic paste to the spices and cook for 2 minutes until fragrant.
- 5Mix 1/2 tablespoon of red chilli powder, 1/2 tablespoon of turmeric powder, 1 tablespoon of coriander powder with 2 tablespoons of water to form a paste. Add this paste to the kadhai and cook for 4-5 minutes.
- 6Add the vegetable puree to the kadhai and cook for 10 minutes. Season with salt.
- 7In another pan, sauté 1 chopped onion and 1 capsicum until slightly softened.
- 8Add the sautéed onion and capsicum to the curry and cook for 2 minutes.
- 9Gently add the paneer cubes to the curry and cook for 5 minutes.
- 10Stir in the garam masala and cook for an additional 2 minutes.
- 11The curry is ready. Serve it hot with your choice of Indian bread or Naan.
