Roti Upma

A quick and tasty dish made from leftover rotis, perfect for breakfast, lunch, or as a snack. This recipe combines shredded rotis with a flavorful mix of spices and peanuts, garnished with fresh coriander.

Ingredients

  • 5.5 units Leftover roti
  • 2 tablespoons Oil
  • 3 tablespoons Peanuts
  • 5.5 units Garlic cloves
  • 3.5 units Dry red chillies
  • 0.25 teaspoon Cumin seeds
  • 0.25 teaspoon Mustard seeds
  • 1 unit Onions
  • 0.25 cup Green peas (Optional)
  • 6.5 units Coriander leaves
  • 0.25 teaspoon Red chilli powder
  • 0.25 teaspoon Turmeric
  • 1 pinch Amchoor (dried mango powder)
  • 0.5 teaspoon Salt

Instructions

  1. 1Using a mixer, finely shred the leftover rotis and set them aside.
  2. 2Add peanuts, garlic cloves, and dry red chillies to the mixer jar. Blend the ingredients into a fine powder.
  3. 3In a pan, heat oil and add cumin seeds and mustard seeds. After a minute, add chopped onions and green peas. Sauté for 2-3 minutes until the onions are translucent.
  4. 4Add red chilli powder, turmeric, amchoor, and salt to the pan. Sauté well, then add the shredded rotis and mix thoroughly.
  5. 5Add the peanut garlic powder prepared earlier to the pan. Mix well to ensure even distribution of flavors.
  6. 6Cook the mixture for 5-6 minutes on medium flame. Garnish with coriander leaves before serving.
