TUTTI-FRUTTI ICE CREAM
This refreshing Tutti-Frutti Ice Cream is a delightful treat, perfect for a hot day or a special occasion. The combination of creamy ice cream with the burst of flavors from the crystallized fruits and a hint of sherry creates a truly unique and satisfying dessert. Ingredients
- 3 pints Heavy cream
- 1 pound Powdered sugar
- 9 count Egg yolks
- 1/2 pound Crystallized fruit (peaches, apricots, cherries, citron, etc.), finely chopped
- 1 wineglass Pale dry sherry
- 1 count Orange juice (From one orange)
- 1 count Lemon juice (From one lemon)
Instructions
- 1In a large bowl, combine the heavy cream, powdered sugar, and egg yolks. Whisk until well combined and the sugar is dissolved. This will be the base for your ice cream.
- 2Freeze the cream mixture in an ice cream maker according to the manufacturer's instructions until it is half-frozen. This usually takes about 20-30 minutes. Once half-frozen, add the chopped crystallized fruit, pale sherry, and either the orange juice or lemon juice. Mix well to distribute the fruit and liquid evenly.
- 3Continue to freeze the ice cream in the ice cream maker until it reaches the desired consistency. Alternatively, transfer the mixture to an airtight container and freeze for at least 2 hours, or until firm.
