The texture is smooth and creamy, with delightful bursts of fruity sweetness.

Ingredients

  • 3 pints Heavy cream
  • 1 pound Powdered sugar
  • 9 count Egg yolks
  • 1/2 pound Crystallized fruit (peaches, apricots, cherries, citron, etc.), finely chopped
  • 1 wineglass Pale dry sherry
  • 1 count Orange juice (From one orange)
  • 1 count Lemon juice (From one lemon)

Instructions

  1. 1In a large bowl, combine the heavy cream, powdered sugar, and egg yolks. Whisk until well combined and the sugar is dissolved. This will be the base for your ice cream.
  2. 2Freeze the cream mixture in an ice cream maker according to the manufacturer's instructions until it is half-frozen. This usually takes about 20-30 minutes. Once half-frozen, add the chopped crystallized fruit, pale sherry, and either the orange juice or lemon juice. Mix well to distribute the fruit and liquid evenly.
  3. 3Continue to freeze the ice cream in the ice cream maker until it reaches the desired consistency. Alternatively, transfer the mixture to an airtight container and freeze for at least 2 hours, or until firm.
