FROZEN CUSTARD
This classic frozen custard recipe offers a refreshing and creamy treat, perfect for a hot day or a special dessert. The combination of rich egg yolks, sweet milk, and vanilla creates a delightful flavor profile that is both comforting and elegant. Serve this homemade custard on its own, with fresh berries, or as a base for other delicious creations.
Ingredients
- 1 quart Milk
- 5 large Large eggs (Yolks only)
- 1/2 cup Granulated sugar (Sweeten to taste (estimated))
- 1 teaspoon Vanilla extract (Flavor to taste (estimated))
- 1 cup Canned strawberries (optional) (For serving)
Instructions
- 1In a saucepan, bring the milk to a simmer over medium heat. Do not boil. This should take about 5 minutes.
- 2In a separate bowl, whisk together the egg yolks and sugar until pale and slightly thickened. This should take about 2 minutes.
- 3Slowly drizzle a small amount of the hot milk into the egg yolk mixture, whisking constantly to prevent the eggs from scrambling. Continue adding the milk in a slow stream, whisking constantly, until about half of the milk has been incorporated. This should take about 3 minutes.
- 4Pour the egg yolk mixture into the saucepan with the remaining milk. Cook over low heat, stirring constantly with a wooden spoon, until the custard thickens enough to coat the back of the spoon (about 170°F / 77°C). Remove from heat and let cool completely. This should take about 10 minutes.
- 5Stir in the vanilla extract. Pour the custard into a freezer-safe container. Freeze, stirring every 30 minutes to break up ice crystals, until the custard reaches a soft-serve consistency (about 2 hours). Alternatively, use an ice cream maker according to the manufacturer's instructions. This should take about 2 hours.
- 6Serve the frozen custard immediately, or transfer to a freezer for a firmer consistency. Garnish with canned strawberries, if desired.
