Instructions

  1. 1In a large bowl, whisk together 2 cups of flour, 1 teaspoon of baking powder, and 1/2 teaspoon of salt. Sift these ingredients to ensure they are well combined.
  2. 2In a separate bowl, beat the yolks of 3 eggs. Stir the beaten egg yolks into 1 1/4 cups of milk. Add the wet ingredients to the dry ingredients and mix until just combined. Then, add 1 tablespoon of melted butter and mix.
  3. 3In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the beaten egg whites into the batter.
  4. 4In a separate bowl, mix 1 1/2 cups of flour, 1 teaspoon of baking powder, and 1/4 teaspoon of salt. Add 1 3/4 cups of milk slowly, then 1 well-beaten egg and 2 tablespoons of melted butter. Drop by spoonfuls on a hot buttered waffle iron, putting one tablespoon in each section of the iron. Bake and turn, browning both sides carefully; remove from the iron; pile one on top of the other and serve at once.
