Ingredients

  • 1 tablespoon Butter (or vegetable shortening) (Originally butter or shortening. Use butter or vegetable shortening for similar results.)
  • 1/4 cup Granulated sugar
  • 1 each Egg yolk
  • 1/2 cup Whole milk
  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1/2 cup Berries or pitted cherries
  • 2 tablespoons All-purpose flour (For rolling berries)
  • 1 cup Granulated sugar (For hard sauce)
  • 1/2 cup Unsalted butter
  • 1 teaspoon Lemon zest or lemon extract (Or to taste)

Instructions

  1. 1In a medium bowl, cream together the butter and sugar until light and fluffy. Beat in the egg yolk. Gradually add the milk, mixing until combined.
  2. 2In a separate bowl, whisk together the flour, baking powder, and salt.
  3. 3Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Gently fold in the berries or pitted cherries that have been rolled in flour.
  4. 4Grease a melon mold (or similar heat-safe bowl) thoroughly.
  5. 5Pour the batter into the prepared mold. Place the mold in a steamer or a pot with boiling water, ensuring the water reaches halfway up the sides of the mold. Cover and steam steadily for 2 hours, or until a toothpick inserted into the center comes out clean.
  6. 6While the pudding is steaming, prepare the hard sauce. Cream together the sugar and butter until smooth. Flavor with lemon zest or lemon extract.
