STEAMED BERRY PUDDING

Ingredients
- 1 tablespoon Butter (or vegetable shortening) (Originally butter or shortening. Use butter or vegetable shortening for similar results.)
- 1/4 cup Granulated sugar
- 1 each Egg yolk
- 1/2 cup Whole milk
- 1 cup All-purpose flour
- 1 teaspoon Baking powder
- 1/4 teaspoon Salt
- 1/2 cup Berries or pitted cherries
- 2 tablespoons All-purpose flour (For rolling berries)
- 1 cup Granulated sugar (For hard sauce)
- 1/2 cup Unsalted butter
- 1 teaspoon Lemon zest or lemon extract (Or to taste)
Instructions
- 1In a medium bowl, cream together the butter and sugar until light and fluffy. Beat in the egg yolk. Gradually add the milk, mixing until combined.
- 2In a separate bowl, whisk together the flour, baking powder, and salt.
- 3Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Gently fold in the berries or pitted cherries that have been rolled in flour.
- 4Grease a melon mold (or similar heat-safe bowl) thoroughly.
- 5Pour the batter into the prepared mold. Place the mold in a steamer or a pot with boiling water, ensuring the water reaches halfway up the sides of the mold. Cover and steam steadily for 2 hours, or until a toothpick inserted into the center comes out clean.
- 6While the pudding is steaming, prepare the hard sauce. Cream together the sugar and butter until smooth. Flavor with lemon zest or lemon extract.
