Ingredients

  • 2/3 cup Soft, fresh bread crumbs
  • 2/3 cup All-purpose flour
  • 2 teaspoons Baking powder
  • 2/3 cup Butter or vegetable shortening (Originally fine chopped suet. Substituted with butter or vegetable shortening for modern preference.)
  • 2/3 cup Granulated sugar
  • 1 Large egg
  • 2/3 cup Dates, chopped fine
  • 1/2 teaspoon Salt
  • 1 teaspoon Vanilla extract
  • 2/3 cup Whole milk
  • 1/2 cup Granulated sugar (For lemon sauce)
  • 1 tablespoon All-purpose flour (For lemon sauce)
  • 1 cup Water (For lemon sauce)
  • 2 tablespoons Lemon juice (For lemon sauce)
  • 1/8 teaspoon Salt (For lemon sauce)
  • 1 teaspoon Butter (For lemon sauce)

Instructions

  1. 1In a large bowl, mix together the bread crumbs, flour, baking powder, suet (or butter/shortening), sugar, egg, chopped dates, salt, vanilla, and milk in the order given. Stir well for 2 minutes until all ingredients are combined.
  2. 2Place the mixture in a buttered mold. Steam for 2 hours on the stove or in a fireless cooker.
  3. 3In a saucepan, mix the flour, sugar, and salt. Add the water and cook for 1 minute, stirring constantly. Add the lemon juice and butter. Beat vigorously until smooth.
  4. 4Serve the steamed date pudding hot with the lemon sauce.
