FRIED CUCUMBERS

FRIED CUCUMBERS

These fried cucumbers offer a unique and refreshing twist on a classic side dish. The cucumbers are first soaked in a saltwater brine, then coated in a crispy cracker crumb and fried to golden perfection. The result is a satisfyingly crunchy exterior with a tender, flavorful interior. Serve these alongside boiled chicken for a delightful and unexpected meal.

Ingredients

  • 2 medium Cucumber
  • 2 tablespoons Salt
  • 4 cups Water (Quantity estimated (not specified in original recipe))
  • 1 large Egg
  • 1 cup Cracker crumbs
  • 3 cups Vegetable oil (For frying. Quantity estimated (not specified in original recipe))

Instructions

  1. 1Peel the cucumbers and slice them lengthwise into approximately 1/4-inch thick slices, similar to the thickness of eggplant slices.
  2. 2Place the cucumber slices in a bowl and cover them with cold water. Add the salt and stir to dissolve. Let the cucumbers soak in the saltwater brine for about 1 hour.
  3. 3In a shallow dish, beat the egg. In another shallow dish, place the cracker crumbs.
  4. 4Heat the vegetable oil in a deep fryer or large skillet to 350°F (175°C). Dip each cucumber slice first in the beaten egg, then in the cracker crumbs, ensuring it's fully coated. Carefully place the coated cucumber slices into the hot oil, being careful not to overcrowd the pan. Fry for about 2-3 minutes per side, or until golden brown and crispy.
  5. 5Remove the fried cucumbers from the oil and place them on a colander or wire rack to drain excess oil. Serve immediately.
