COMPOTE OF PINEAPPLE
This refreshing compote of pineapple offers a delightful balance of sweet and tangy flavors, perfect as a light dessert or a sophisticated side dish. The pineapple is simmered until tender and infused with the bright zest of orange juice, creating a simple yet elegant treat. The addition of brandy, if desired, adds a warming depth to the overall experience.
Ingredients
- 1 medium Pineapple
- 1/2 pound Granulated sugar
- 1/4 cup Orange juice (From 1-2 tart oranges, estimated quantity.)
- 1/4 cup Brandy (optional)
Instructions
- 1Cut off the rind of the pineapple, core it, and trim out all the eyes. Cut the pineapple into desired slices.
- 2Place the pineapple slices in a saucepan. Add the sugar and orange juice. Bring to a boil over medium heat, then reduce heat and simmer until the pineapple is tender and translucent, about 20-25 minutes.
- 3Remove the pineapple from the saucepan and place it in a compote dish. Increase the heat to medium-high and boil the syrup in the saucepan until it thickens slightly and becomes clear, about 5 minutes.
- 4Pour the reduced syrup over the pineapple in the compote dish. If desired, add the brandy. Let it cool completely before serving. Serve chilled.
