COMPOTE OF PINEAPPLE

This refreshing compote of pineapple offers a delightful balance of sweet and tangy flavors, perfect as a light dessert or a sophisticated side dish. The pineapple is simmered until tender and infused with the bright zest of orange juice, creating a simple yet elegant treat. The addition of brandy, if desired, adds a warming depth to the overall experience.

Ingredients

  • 1 medium Pineapple
  • 1/2 pound Granulated sugar
  • 1/4 cup Orange juice (From 1-2 tart oranges, estimated quantity.)
  • 1/4 cup Brandy (optional)

Instructions

  1. 1Cut off the rind of the pineapple, core it, and trim out all the eyes. Cut the pineapple into desired slices.
  2. 2Place the pineapple slices in a saucepan. Add the sugar and orange juice. Bring to a boil over medium heat, then reduce heat and simmer until the pineapple is tender and translucent, about 20-25 minutes.
  3. 3Remove the pineapple from the saucepan and place it in a compote dish. Increase the heat to medium-high and boil the syrup in the saucepan until it thickens slightly and becomes clear, about 5 minutes.
  4. 4Pour the reduced syrup over the pineapple in the compote dish. If desired, add the brandy. Let it cool completely before serving. Serve chilled.
