Pineapple Charlotte

Ingredients
- 2 tablespoons Cornstarch
- 2 Egg whites
- 4 tablespoons Cold water
- 1 teaspoon Vanilla extract
- 1/4 teaspoon Salt
- 1/2 teaspoon Lemon extract
- 1/4 cup Granulated sugar
- 2 slices Pineapple (Cut lengthwise into slices.)
- 1 cup Boiling water
- 2 Egg yolks
- 1/3 cup Granulated sugar
- 1/8 teaspoon Salt
- 1 tablespoon All-purpose flour
- 2 cups Milk
- 1 teaspoon Vanilla extract
Instructions
- 1Cut the pineapple slices lengthwise.
- 2In a saucepan, whisk together the cornstarch, salt, and sugar. Gradually add the cold water, stirring well to combine. Then, add the boiling water.
- 3Cook the mixture over medium heat for about five minutes, stirring constantly. Then, remove from heat and add the vanilla extract and the stiffly beaten egg whites.
- 4Pour the mixture into a moistened mold in which the pineapple slices have been arranged. Set in a cool place for two hours to set.
- 5In a double boiler, beat the egg yolks. Slowly add the sugar and the flour, well blended, the salt, and the milk. Cook until thick enough to coat a silver spoon. Add the vanilla extract.
- 6Serve the Pineapple Charlotte cold with the custard sauce.
