APPLE JELLY CAKE

Ingredients
- 1 cup Butter
- 2 cups Granulated Sugar
- 4 large Eggs
- 1 cup Milk
- 2 teaspoons Baking Powder
- 3 1/2 cups All-Purpose Flour
- 3 large Large Apples (Granny Smith or similar)
- 1 whole Lemon
- 1 cup Granulated Sugar
- 1 large Egg
Instructions
- 1In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, whites beaten separately. Add the milk, baking powder, and flour. Mix until just combined.
- 2Preheat oven to 350°F (175°C). Grease and flour two layer cake tins. Pour the batter evenly into the prepared tins. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- 3While the cake is baking, prepare the filling. Peel and grate the apples. Combine the grated apples, lemon juice and peel, sugar, and egg in a saucepan. Cook over medium heat, stirring constantly, until the mixture thickens.
- 4Let the cake layers cool completely. Once cooled, spread the apple filling between the layers and on top of the cake. Serve and enjoy!
