Cream of Citron Liqueur
A bright yellow citrus liqueur made with citron oil, high-proof spirits, and sugar syrup. This historical recipe produces a sweet, aromatic cordial similar to limoncello.
Ingredients
- 60 drops Citron essential oil (Food-grade citron oil or lemon oil)
- 4 cups High-proof grain alcohol (190 proof/95% ABV) (Original called for 62 degrees overproof spirits of wine; use Everclear or similar)
- 4 cups Simple syrup (1:1 sugar to water) (Can be made by dissolving 2 cups sugar in 2 cups water)
- 2 ounces Yellow food coloring (Optional; use natural turmeric or saffron for coloring if preferred)
Instructions
- 1Add 60 drops of citron essential oil to the high-proof alcohol in a clean glass bottle or jar with a tight-fitting lid
- 2Seal the container tightly and shake vigorously for 1-2 minutes to thoroughly combine the oil and alcohol
- 3Add the simple syrup and yellow food coloring to the alcohol mixture. Stir or shake gently to combine all ingredients
- 4Set up a funnel with coffee filters or cheesecloth over a clean container. Pour the liqueur mixture through the filter slowly, allowing it to drip through completely
- 5If the liqueur is not sufficiently clear and bright, set up fresh filters and filter the liqueur a second time through clean coffee filters or cheesecloth
- 6Pour the filtered liqueur into clean, sterilized bottles. Seal tightly with caps or corks. Store in a cool, dark place
