Cream of Noyau

A traditional almond-flavored liqueur made with bitter almond and orange oils infused in high-proof spirits and sweetened with simple syrup. This delicate cordial has a distinctive nutty flavor with citrus notes.

Ingredients

  • 4 cups High-proof vodka or neutral grain spirit (at least 150 proof/75% ABV) (Original recipe called for 'spirits of wine sixty-two degrees overproof' which is approximately 150 proof)
  • 20 drops Pure bitter almond extract or food-grade bitter almond oil (Use food-grade bitter almond extract; do not use essential oils not intended for consumption)
  • 6 drops Food-grade orange oil or pure orange extract (Must be food-grade oil suitable for consumption)
  • 4 cups Simple syrup (1:1 sugar to water ratio) (Make by dissolving equal parts sugar and water)

Instructions

  1. 1If not already prepared, make simple syrup by combining 2 cups sugar with 2 cups water in a saucepan. Heat until sugar dissolves completely, then cool to room temperature.
  2. 2Pour the high-proof vodka into a large glass bottle or jar. Add 20 drops of bitter almond extract and 6 drops of orange oil.
  3. 3Seal the bottle tightly and shake vigorously for 1-2 minutes to thoroughly combine the oils with the spirits.
  4. 4Add the cooled simple syrup to the spirit mixture. Seal and shake well again to combine thoroughly.
  5. 5Line a funnel with coffee filters or cheesecloth and slowly pour the liqueur through into clean bottles. Continue filtering through fresh filters until the liqueur is completely clear. This may require multiple filtrations.
  6. 6Pour the filtered liqueur into clean, sterilized bottles. Seal tightly with caps or corks. Store in a cool, dark place. The liqueur is ready to drink immediately but will improve with age.
