Cream of Aniseed Liqueur
A sweet anise-flavored liqueur made by infusing essential oil of aniseed in high-proof alcohol and sweetening with simple syrup. This historic cordial recipe produces a clear, aromatic digestif similar to anisette.
Ingredients
- 20 drops Essential oil of aniseed (Food-grade essential oil only)
- 4 cups High-proof neutral grain spirit (190 proof or vodka) (Original called for spirits of wine; use Everclear or high-proof vodka)
- 4 cups Simple syrup (1:1 sugar to water) (Can be made ahead or purchased)
Instructions
- 1Add 20 drops of essential oil of aniseed to 4 cups of high-proof neutral grain spirit in a clean glass bottle or jar with a tight-fitting lid.
- 2Seal the container tightly and shake vigorously for 1-2 minutes to thoroughly combine the essential oil with the alcohol.
- 3Add 4 cups of simple syrup to the aniseed-infused alcohol and stir or shake gently to combine thoroughly.
- 4Filter the liqueur through a coffee filter, fine cheesecloth, or paper filter to remove any cloudiness or particles. This may take 15-30 minutes depending on your filtering method.
- 5Pour the filtered liqueur into clean, sterilized bottles. Seal tightly with caps or corks. The liqueur is ready to drink immediately but will mellow and improve with age.
